to make stuffing:
in a pan, add grated coconut, sugar and cardamom powder
fry until sugar melts and the mixture becomes little dry
turn off the flame and keep aside
to make outer layer:
in a kadai add water and sugar, boil it
when it starts boiling add semolina, stirring continuously to avoid forming lumps
add oil and cardamom powder
cook this mixture on low flame for 1 minute
remove from flame and keep aside
wait till the dough cools down to room tempreture
knead again for few seconds to make the dough soft
make small balls from the dough
flatten slightly and put the stuffing to it, then roll it again to make a ball
make the balls into flat shape in between your palms
heat oil in a kadai and deep fry the flatten balls on medium flame till it turns golden brown from each side
kakara pitha is ready, serve hot or cool
